I vote Tombstone. Val Kilmer at his best IMO. "I'm your huckleberry."

I also like "Dancing With Wolves" though it was about the frontier and not really the West as we know it. And "Silverado", starring Kevin Costner, Kevin Klien, Dennis Quaid and Danny Glover.
