Cancers!. They can have a limited comfort zone and can harbor insecurities, so if something about you upsets them, you can be fair game for a hard time regardless of the reason, in order for them to get their comfort back!. This can happen suddenly, so you may not see it coming!. Because they are also a sensitive sign, guilt will probably affect them later, so expect a much delayed apology, if they get up the courage to initiate it!. (You may have to say something first!.)
Leos and Aries could also backstab for the opposite reason, more confidence, which means they may behave as they please without worrying or thinking too much about your feelings!.
I disagree with the assessment of Scorpios that I see here, though I understand the reasoning!. Scorpios can be rough and intense, but also very sensitive, especially to right vs!. wrong, so they'd be more likely to defend you aggressively if you're close to them and someone else wrongs you!. They also are good about respecting people's privacy, the way they want their own respected, so no, they're not backstabbers!.
I have experience with Scorpios, and I live with two very dedicated ones, by the way!. They would never backstab anyone; if anything, they spend too much time being careful and worrying about others' feelings and trying to protect them!.
also, a true Sagittarius is unlikely to backstab you intentionally!. They are overly blunt, and are likely to tell you what they see as the truth very frankly and plainly, and hurt your feelings!. They can preach too much!. They would be sorry they hurt you, but not sorry they told you the "truth"!. You have to realise that every person will have their own unique experiences so I do not think that there is a "backstabber" sign per se!.
It all depends with whom we interract, the vibes you give out and the vibes back at you!.

I was stabbed in the back by a Cancer girl and a Gemini guy (my ex) and a Sagittarius girl (who I loved to absolute pieces but the Cancer girl spread all of these lies about me and the Sadge girl believed the Cancer girl and started treating me AWFUL!!) OH BOY did that hurt!!! but I do not think that means that all Cancers, Geminis or Sagittarius are back biters!.

One of my really sweet friends is a Capricorn, but I've met some sour Capricorns (females) and Scorpios (males)!. Caps are quiet and Scorpios not so quiet about death wishes and vengeance, but they're intense!.
