I have this same combo in fact! Gemini's are quite different from cap's, just like scorp's are totally different from both! The key is not to say you are unstable. In truth, everyone who is not an aries rising, leo sun, cancer moon is because their house placements are outta wack! Also, their emotions and ego are not up to par as they should be.
The capricorn ascendant presents this serious, stern, wise, practical being who generally hates admiting her/his own weaknesses. This is why caps are famous for being "unemotional" because they are confused about what they do feel. The gemini sun shows someone flirty and talkative, lively and entertaining. Pretty much the opposite of capricorn. I felt, upon first seeing my birth chart, that this duel didn't click. It doesn't add up, make sense, or seem to be "stable". But the way I looked at it was that I have both worlds here. It's not that I am confused, but instead, I can be the capricorn or the gemini. I eventually, after studying the signs more in-depth, just tried being the positive goat and the positive twins. I still have my negative moments, but astrology teaches us to bring out the good and throw away the bad.
This by no means makes you unstable.....instability comes from much more than sign placements.
