Hi. No, mercury doesn't shape their philosophies. Philosophy is actually shaped by the sign and planets in the ninth house. Mercury rules the communications and thought process aspect as you've said. It assists with how we think, what we will think about, how fast of a thinker, how witty, how cynical, etc. It also effects our speech in the exact same manner. This is why you'll find that geminis and virgos are very fast talkers. Mercury rules both of these signs, and it causes them to think and talk fast. Good in business.
