I like spinach leaves in my salads and I use it in place of lettuce and I also puree raw spinach and put it in all my gravies and sauces. It adds color and doesn't really change the flavor and my kids get the greens that they need and they are none the wiser.

All of the above, I like spinach either raw with lettuce in a salad or cooked lightly with butter and garlic.
Spinach can be used instead of lettuce in a salad. I also like to saute spinach in olive oil with some garlic. Good vegetable.
