Criss Angel is less a magician and more a manipulator. I have known people that have been on his show, and I was told by them that he uses editing and camera tricks, as well as actors pretending to be "people off the street" that are witness to his "magic"... My friend happened to be one of those people. He watched as Criss supposedly walked up the side of a skyscraper all the way to the top while a crowd of astonished people watched from the ground below. The TV show made it look like the people watching were regular folks and that the building was on a street in a city, it was actually a building on the backlot of a production studio with a group of actors watching. My friend said that they edited the wires and the view of the crane pulling him up out of the shot before it went to TV.
As far as Criss walking on water, I can't tell you exactly how, but I'm sure they used that same kind of TV trickery, I would guess that the shots you saw on his show were altered drastically before they made it to TV.
