basiclly its shows what character is like take naruto for example u dont wanna see him fighting or doing some in all episodes in fillers they show what he do in his free time i think that what make naruto or other anime more interesting and u get to know ur favorite character!. if they didnt had these fillers u wouldn't know anything about ur favorite anime character for exp: naruto like sakura, ramen and pretend sleeping u wouldn't know that!.

Fillers for one can be used to show us the characters in a fun or normal situation, or to enlighten us to a certain trait they have that would have been akward to show in the overall ark of the story!. also fillers are also used to stretch the time before new material for the overall story is published (like with an anime that is made after a running manga-series)!.
And last but not least they can show you little parts of a characters life or past without intruding upon the original story-line!.
