"Azumanga Daioh" refreshingly light humor show about a group of girls in high school.
"Here Is Greenwood" (anime and manga) - it's twisted and funny, like FLCL.
"Hale & Guu" Hale was just your typical kid living with his mom in the jungle, until Guu showed up.... "Who is Guu?" is not important. We all want to know "WHAT is Guu?!" (oh, and don't forget the chest hair!)
"Kino's Journey" - A girl and her talking motorcycle travel from land to land in this surprisingly emotional and thought provoking series.
Nadia Of The Mysterious Sea - if Jules Verne had done anime, this is what it'd look like.
Gunbuster (the first one, anyways) - part space opera, part drama, part self-refential anime humor. The classic mini-series from Gainax (makers of Eva)
