to answer your question, itachi was one of the most, if not the most gifted uchiha of his time (excluding madara). he achieved sharingan at age 8. and became anbu captain at his capacity.
im sure there were a few members who did fight back but against a power like itachi's...well you saw how well kakashi faired against him.
and secondly, no. sharingan cant see into the future. however, it is capable of performing genjutsu that would make it appear so. (ie: kakashi vs zabuza). perhaps this is where you got the idea? but the sharingan is not capable of seeing the future any farther from trajectory paths of movements. and even that is faulty (kyuubi naruto vs sasuke).

to jiraiya is no liar, thats what i was saying. kakashi used genjutsu to make it seem like he could see the future. but all he did was screw with zabuza's mind
Nah Kakashi just said that to throw Zabuza off his game. That just shows you how much more powerful the Mangekyou Sharingan and how much more powerful Itachi and Madara were than the rest of the clan.

The Uchiha's Sharingan gives them the ability to read Genjutsu, Taijutsu and Ninjutsu and then defeat it. As such, the clan members can view a technique being performed and almost instantly memorize the movements required to be able to complete it, including the needed chakra moldings and seals used.
Basically even though they could predict Itachi's movement, you must also remember that Itachi is an Uchiha as well. What's more is that Itachi posessed the Mangekyou Sharingan -- causing him to become stronger, seeing that only a blessed view can obtain Mangekyou Sharingan.

they couldnt see the future, they just can see the flow of chakra...and somethin like copying the jutsu of other opponent cast...
and itachi is the best with his mangekyou at those time, and certain people said that uchiha madara help him to eradicate his clan...
