Alright, let me explain a little bit of the subbing process from start to finish.
-Someone is recordding the anime as it airs in Japan. After it gets done, they have to take time to upload it. Then the subbers have to take the time to download it.
-Once the subbers get a hold of it, the translator watches the anime and writes down the script (some just write it in down in Japanese first and translate after they are done, while others translate on the fly). They have to stop and pause often (and sometimes rewind) in order to get everything- especially when many people are talking at once or talking very fast.
-Someone else will read through the script and watch the anime episode and do a translation check. There could be some words that the main translator misheard or got confused on, and they need to check that. That's another 25 minutes.
-Next you have an editor that makes sure it flows properly in English, since Japanese and English are two very different languages.
-Another job that needs to get done is the timing. This is where a person will watch an episode and listen to precisely when people speak, and then use a program to tell that this is when the subtitle needs to appear on the screen. This takes quite a bit of time because they don't want the subtitles appearing at random times, taking your focus off the anime. Even for a good timer, this process will take an hour and a half.
-If there are any signs or anything, there needs to be someone who knows kanji to translate them, and then they need to use a program to put the new text on the screen so it fits in with the rest. Sometimes this is difficult because the text may be moving across the screen in different ways.
-After all this gets done, you still need to encode the video. What this means is that a person will run different sripts on the video so that the subs get properly added in, as well as cleaning up the video and make it pretty. Encoding usually takes at least an hour. And if there are problems, the video may need to be reencoded.
-Once that is all done, you still need to have a QCer watch the video once more and make sure that there are no errors in the completed product.
-After that gets done, you are ready for release.
I think the fastest possible time to sub a complete episode of anime was estimated to be between 3-4 hours. However, that's assuming you have the best machines, fastest workers imaginable, and no breaks. In reality though it takes much longer. Fansubs groups are made up of teams where each person will do a certain part. Sometimes someone, say your encoder, will not be immediately available (people DO have real lives), you will just have to wait until he is ready to do it. Or there maybe a weird thing in the translation, and the group needs outside help to get it done. There are all kinds of problems and delays.
Because of all this, we usually see subs for anime between 10 hours and a few days after an episode airs for weekly anime releases- depending on the dedication and skill of the group.

it takes time....
That's what it looks like but when you really learn how to sub you will realize that it takes more than that between translating & checking & editing the timing & all the other stuff it isn't as easy as it looks just to synchronize the subbs with the video take at least 1 hour & this isn't just done by one person it's a whole team that does that so if you wanna learn more about this try & google it
It takes so long because they have to get the voice actors talking matched up with the anime character.

If you don't mind the lip-synch not mattering, the quality of the recording being ***, and the voice actors not always using the right tone of voice, sure, it only takes a half-hour, assuming the actors don't sneeze or anything like that.
It's kind of like asking "Why does it take more than an hour for a band to record an album?"
this is what i knowledge i have of what they do.
1.)put their words in Japaneses lettering.
2.)translate into English
then they must keep cutting the clips so all the subs go on the clip without over covering the entire screen.
it would take while. plus they do it for free so we can't complain. =)
