Um, you asked why some of them Don't follow the manga? Well, as frustrating as it is, when the producers get together they are the ones who decide what will sell. That's basically it in the nutshell.

A prime example is an interview with the director/producer of Samurai Deeper Kyo in the extras section of the dvd. During an interview, he was asked why the "bad guys" change into monsters, when in the manga they do not. His answer was simple. He didn't think the bad-a** sword techniques the protagonists used in the manga were enough for the anime version. So they decided they needed more action, and thus the creation of the bug-like monsters.

A lot of times too, the anime series' need filler episodes, for various reasons, for example to let the manga "catch up" or to draw out suspense for the upcoming new story arc.

Bleach and Naruto are two of the ones on the top of my mind that are notorious for filler episodes. But...I still wait eagerly for more!!

Probably to make things more interesting. People won't watch the anime if they already know exactly what's going to happen/
