My suggestion is Blood+ (50 episodes). It is still being aired on Cartoon Network Adult Swim every Saturday [ep 42 I think], but you can watch the Japanese episodes [with English subtitles] online on animecrunch or veoh. You can also download from www.animedownloads.us or www.anime-eden.com. If you haven't seen it before, I would suggest not watching the Adult Swim series because it is near the end. This anime is best appreciated if watched from the beginning, you can see how the characters and the plot develops.

If you don't mind something a little lax on censorship, Midori no hibi is romantic and funny(with some nudity- booyah)
Black Cat has a strong dramatic sense with some funny as hell moments.
Along the lines of Fruits Basket I think you'll like Gakuen Alice (i.e.- Alice Academy), Magikano(again censorship warning)
For something serious try Fate-Stay Night, Blood+, Inu Yasha, Black Jack(an all time great; both the 2004 series and BlackJack21 series are awesome), Gun X Sword, .Hack// (any of the three installments thereof), Chronicle of the Wings(i.e- TsubasaChronicle), Jigoku Shoujo, Escaflowne, Yu Yu Hakusho, Neon Genesis, etc.
