Question: It was never said who Sasori's jinchuuriki was, but I'm assuming he might have already captured it before he died. It wasn't Gaara because that was Deidara's; each member is assigned one jinchuuriki. (For example: Itachi was assigned the nine-tails and Kisame was assigned the four-tails)
If you mean who is the weakest out of brute strength, I think maybe Deidara since he doesn't use taijutsu. But if you mean overall weakest then Kisame or maybe even Deidara. It's hard to guess since everyone is extremely powerful in Akatsuki.

Sasori and Deidara's jinchuuriki was Gaara.
It's hard to classify the Akatsuki, seeing as they are all S-ranked criminals and most of them haven't even shown their true potential yet.
But I'm going to have to say fish-boy -- yup, Kisame. Sure he has a great amount of chakra but besides that he only has a huge sword that eats chakra and he is a fishie, nothing more.
