X is the title that came to my mind, it falls into the category you mentioned... =)

Blue Seed is a really good one. I don't watch those kind of animes too much, so that's the best I can give you. Good luck in your search!

Scrapped Princess is so far good. I haven't seen the last DVD yet. But it fits in your category of post apoctolyptic.

Evagelion is sort of good but Shinji whines a little too much and the ending leaves much to be desired(either one of them).

Rahxephon is pretty good.

A freind of mine says Gilgamesh starts off really slow and then it really drew him and he recommened it.

I got the first DVD of E's Otherwise and that's as far I got and pry will get. I didn't think too much of it, maybe it gets better in the rest of DVDs.

Akira is good.

Well that's all the help I can give. Hope it helps.

Wow, that's a lot. Trigun is another one that's set in a post apocalyptic world. I think Nausicaa of the Valley of the Wind was also. I don't think Code Geass counts, it's set in an alternate universe or something. These are all pretty good.
