If you are talking about Family Guy's latest episode, Louis Kills Stewie, he did not die. He was seeing what it would be like if he tried to kill Louis in virtual reality. Peter shoots and kills him in the virtual reality scene, and then you find out that it was fake and Stewie and Brian talk about it. He is still alive!! :-) Stewie is so funny.
