I think it depends on at which point in time. If they are at the same Jedi level.... I would put my money on Mace. I dont think Luke had Anakians natural fighting abilities.
Now, Anakian could probably take Mace, at the end of Sith.
probably Luke b/c he has a great amount of "the force" with him but you never know mace is a really good fighter
I'd say Windu, he's got the experience to back up his moves.
