Definitely Cowboy Bebop. Trigun is good too, but it has some fillerish episodes and the animation quality is no where near Cowboy Bebop's.

Cowboy Bebop...not by much. I just like Spike and Faye more than Vash. Two well-done anime.

Trigun for sure. CB is pretty koo. but trigun had some powerful episodes.
