Do they officially changed their birth name?!

Question: I have always noticed some famous people use their new name instead of their birth name. For example - Donna Karan birth name is Donna Ivy Faske and Lance Armstrong birth name is Lance Edward Gunderson.

My question is, Do they really officially changed their name?

They may go through the court system, but that can get costly and time consuming!!! I think it's a stage name and it some cases sounds better.
